Ingredients:
Pizza dough
Shredded mozzarella cheese
Extra virgin olive oil
5-6 Yukon Gold potatoes
5 cloves of garlic
Salt and Pepper
1/4 cup of milk
Butter
Total Cooking Time: 1 hour (I did this in separate steps - you can definitely preheat the oven while boiling your potatoes and cut your time in half)
I like this pizza because I had most of the ingredients on hand already. I hate making exotic foods and having ingredients left over which I never use again, and because my mom cooks Indian food, pizza is pretty exotic to us! I made a quick run to get pizza dough and I was set.
I started off making the mashed potatoes. I peeled about 5-6 potatoes, washed them, and cut them into uniform sized pieces to make them boil faster. When they were tender, I drained them and mashed them with the addition of butter and milk. If there's one thing you should know about me, I never measure anything. I don't even own a measuring cup. Sooo I just added enough butter and milk to make a creamy mixture.
When finished mashing, I added chopped garlic to the paste-like potatoes. I used to cook the garlic in butter first, to infuse the potatoes with flavor, but since I'm putting these potatoes into the oven I didn't find it necessary. It also adds a sort of.. raw flavor to the potatoes. Yes, I am one of those people that eats bits of raw garlic while chopping them up. So delicious!
Next, I stretched the dough to fill a baking sheet and pressed a few holes into it. I coated it with olive oil, added the potato mixture, and added cheese!
Popped this into the oven at 350F for about 40 minutes and viola! Delicious :)
