Mediterranean Pita Sandwich



Whole wheat pita, spicy hummus, spinach, cucumbers, roasted red peppers, red onion, tomato, crumbled feta cheese.

Fruit and Nutella Sandwich

Once again, a sandwich for lack of a panini press. Nutella is not healthy at all, except that it carries a bit of protein (ok fine... so do a lot of other substitutions). I went skimpy on the nutella and double on the peanut butter to make this nutritious. I cut the bananas too thin that I had to make two layers. Without a panini press, it's difficult to hold this together. I'm sure raspberries would go well with this too!

Cheddar Mushroom Sandwich

On my quest to eat healthier. I call this a sandwich because I used bread and don't have a panini press... :'(
Whole grain bread, cheddar cheese, caramelized onions, sauteed mushrooms, and a tomato slice. Served with tomato soup.

Vegetable/Chicken Pizza

Sometimes I hate cooking at home because then I have to make variants of what I actually want to cook. Because my mom wanted broccoli and no onions, and my dad extra tomatoes and no chicken, I had to make a pizza split into thirds.

Recipe: Mashed Potato Pizza

I love mashed potatoes. They can be creamy, buttery, or even onion-y and garlic-y. With the perfect gravy... yum! I decided to make mashed potato pizza. I made this less than two weeks ago with a few friends, but my friend Angela did most of the cooking as the rest of us watched. It came out so well that today I decided to give it a go!
